#22-01-17: Wine more time

And today, we are super cool, we talk to you about Wine more time, a cellar wine ย and bar very nice! ๐Ÿ˜‰

As usual, first question :
What is your background and why did you choose wine? ๐Ÿท

Iโ€™m a Wine Steward since 12 years now, 15 years in the wine business, I have a Fourth-year university level in Food-processing industry, a formation of senior manager in the food industry, I also had 2 trainings in the wine sector: a BTS VITI-ล’NO and a wine steward’s formation. ๐Ÿท๐Ÿ‡๐Ÿ” I worked in milky products, fruits and vegetables and the wine pleased me for a while. ๐Ÿฅ›๐Ÿฅ‘ And Iโ€™mย  also from a wine-producing region.๐Ÿ“ I was during 8 years a cellarman, a leader wine steward in a star restaurant during one year and a half. I was in the biggest complex of wine in Arsac called ” The Winerie ” where I was responsible for the wine bar during 3 years and when I met my partner Alexandre who was guiding assistant shop during one year and a half. โœจ We had the idea to build up a cellar / wine bar, then we kept in touch and during 1 year we looked for a place and we created up our wine bar in 2010. We begin to be the oldest with โ€œLes Quatre Coins du Vinโ€. ๐Ÿ‘Œ๐Ÿพ


Question two, that of the curious

What is the specialty of the cellar ? / How do you select the wines? ๐Ÿค”๐Ÿ‘€

(Ok it seems long, but it is very interesting! ๐Ÿ™๐Ÿฝ)

Our particularity since we created Wine more time, itโ€™s that we work everything in direct. We maintained 450 references of wines to 70-80 %, we work everything in direct, no trader, and we have three commercial for foreign wines. ๐Ÿ‡ต๐Ÿ‡น๐Ÿ‡ฆ๐Ÿ‡ท๐Ÿ‡ซ๐Ÿ‡ทWe avoid at the most the commercial because they always propose the same wines and we can find them everywhere, we preferred to work directly, it demand a lot of work upstream.๐Ÿ’ช

We go to Marseille for the show of Millรฉsime Bio, then we are going to go to Angers for the show of The wines of the Loire. Last year we went toย Montpellier, the Burgundy, it allows us to discuss and to taste with the wine growers. We also work for wines of Jura with wine stewardโ€™s friends, we work a lot with our network. We have almost 3 employees, we hire people with good skills and knowledge who are interested in the wine sector. We consider the price in order to be coherent as much as possible. Our politics itโ€™s to always work with the wine growers, to avoid everything as the cooperative, winemerchant, except broker for Grand Crus classified where we are obliged to pass by a trader, we have 5 references. ๐Ÿ“๐Ÿท๐Ÿฅ‚

We have an excellent value for money, we are one the cheapest in price on Bordeaux. We are very enthusiasts with my partner, the wine is a real passion.
Our most expensive bottles will cost maybe 40-50โ‚ฌ. ย ๐Ÿ’ฐ๐Ÿ’ธ
We have 90 Bordeaux for 450 references to answer the needs of our tourist clients, especially the summer, because weโ€™re on the street St James, which is a pedestrian street which gives to the big bell which is one of monument the most visited by Bordeaux. We have the right to have a terrace for 6 years now with 20 places ! ๐Ÿ˜Žโ˜€๏ธ

We make cellar part and wine bar part, always with two prices, one price to take-out, and a different price to take on table, it is the corkage which varies between 5-7โ‚ฌ. ย ๐Ÿพย A wine list with 15 wine by the glass renewed every week with always 4 Bordeaux, 3 French and 1 foreigners for red, and similar for the whites. ๐Ÿฅ‚๐Ÿท


Question 3 for people who likes to have a good atmosphere, and likes to put it wherever they go โœจ๐ŸŽ‰ :

How would you describe the atmosphere of the cellar? ๐ŸŽ‰

Friendly and based on the discovery. The cellar is divided in two parts, with a more cozy, more quiet corner with sofas and another one with big table, a corner โ€œbodegaโ€. We can have 45 seated people. ย ๐Ÿ˜„ We receive many evenings of group, for the diplomas, the these, the associations, we also make :tastings commented by appointment.๐Ÿ‘Œ ย We have many 20-30-year-old young people and many women, 60-year-old people who are going to mix with the young people, the professionals, the wine growers, the schools โ€ฆ ๐Ÿ‘ง๐Ÿ‘จ๐Ÿ‘ต๐Ÿ‘ด๐Ÿป ย

Question 4, is the question for the greedy (yes we know you feel concerned) :

What style of wine can we advise on the traditional “galette des rois”? ๐Ÿ‘‘๐Ÿคด

A ยซย Coteau du Layonย ยป because it is sweetened but less than what we can find in the region of Bordeaux. This wine has a very beautiful freshness. ๐Ÿพ


The last and after we stopped questioning this poor wine merchant. ๐Ÿ˜‡

What do you think will be the trends of tomorrow? โœˆ๏ธ

Since a few years the trend will go towards organic, natural winesYou should not buy because the wine is organic but because the wine is good, if it is organic itโ€™s just better. ๐Ÿ‘ ย There are a lot of foreign wines which take some size. There are also producers who highlight old vines, old grape varieties, but it is more intended for a warned public. ๐Ÿ‡๐Ÿพ Wines of Sauternes met some difficulties to sell themselves, there are going to be dry wines, but are still in negotiation with the naming to qualify them as wines of Sauternes. ๐Ÿ˜• There are so many more young people who are interested in the wine, who drink other things out of Bordeaux, who allow us to guide them. ๐Ÿ‘‰ We still have progress to make with compared with the Belgian amateurs or the Chinese who are very big connoisseurs, they taste very well. We shall remain the country of the wine, the reference by our climate, our soils, our grapes varieties, but it is necessary to pay attention on the new countries which arrive like India, China or Brazil.๐Ÿ‡ฎ๐Ÿ‡ณ๐Ÿ‡จ๐Ÿ‡ณ๐Ÿ‡ง๐Ÿ‡ท
